The Entree - Chili Glazed Pork Roast
A pork roast will feel decadent while being relatively easy to prepare. This recipe, which calls for 1 tablespoon of brown sugar, will also give the sweet taste that will make it extra special without having too much sugar.

- 1 T brown sugar, packed
- 1 T fresh thyme or 1 tsp dried
- 1 tsp chili powder
- 1 tsp fresh rosemary or 1/4 tsp dried
- 1/8 tsp cayenne pepper
- 1 1/2 to 2 1/2 pound boneless pork loin roast
- fresh rosemary sprigs (optional)
Set oven to 325 degrees. In a small bowl, mix first 5 ingredients. Sprinkle the mix onto the roast and rub it in using your fingers. Place roast in a foil-lined roasting pan and put in oven. Roast with thermometer to an internal temperature of 155 degrees, or for 1 1/4 to 1 1/2 hours. Remove from oven and cover with foil. Let rest about 10 minutes, during which the internal temperature should rise to 160 degrees.
This recipe makes about 8 servings, and if you don't have many people, you can use leftovers for recipes in the days following the holiday, or freeze for later meals.

The Side Dish - Cheesy Vegetable Bake
The side dish complements the main dish, and this one really turns up the tasty. While there are a fair number of ingredients, it is relatively easy to put together, and worth the small effort invested!

- 2 16 ounce packages of frozen broccoli, cauliflower and carrot, thawed and rinsed
- 1 12 ounce can of fat-free evaporated milk
- 1/4 cup onion, chopped
- 2 cloves garlic
- 1/4 tsp black pepper
- 2 T flour
- 3/4 cup shredded cheddar cheese, reduced fat
- 4 ounces neuftachel cheese (reduced fat cream cheese) softened
- 2/3 cup whole wheat breadcrumbs
Heat oven to 350. Using a two quart baking dish, apply spray oil, add vegetables, and set aside. Using a medium saucepan, whisk evaporated milk, onion, flour, garlic and pepper. On medium heat, stir until thick and bubbly. Remove from heat and add cream cheese in chunks and shredded cheese, continuing to whisk until smooth and melted.
Pour mixture over vegetables and stir to coat. Sprinkle on the breadcrumbs, and give them a light coating of spray oil. Bake 40 to 45 minutes, then remove and let stand 5 minutes.
If you are baking the entree at the same time, increase cooking time for the vegetable bake by about 15 minutes. Will be done when breadcrumbs are lightly browned and mixture is bubbly.
